Simply prepared, low-sugar snacks made from fruit harvested in our gardens. Grown using organic, no-chemical methods in our biodiverse and regenerative homestead garden.
Our small batch snacks made in our home kitchen have that unmistakeable homemade taste. Made from this year's harvest using fresh fruit preserved within hours of harvesting.
We preserve our fruit for snacking with a home-scale freeze dryer (the same process used to make astronaut ice cream!). We leave the peel on for fiber.
With some fruits such as apples and pears, we dip them in diluted honey water or lemon juice to reduce browning.
Never ever: chemicals, sulfites.
Freeze-dried fruit has a crunchy texture and the flavor is bright and fresh.
To freeze-dry, we take our fresh garden product directly to our home-scale freeze-drying machine. Freeze-drying requires a specialty machine to dehydrate foods through rapidly freezing down to -40 degrees, then lowering the pressure with a vacuum, removing the ice via sublimation.Because of the low temperatures, the fruit retains more of its original qualities: its color, shape, nutrients, and aromatics are closer to fresh.
