Homegrown Freeze-Dried Leeks

4 items left

Farm-direct garden-grown leeks, sliced, freeze-dried, and ready for soups, stews, and casseroles. Rehydrates quickly: simply toss them into what you're cooking and they'll be fully rehydrated within a few minutes.

Simply prepared, shelf-stable food made from raw fruit and vegetables harvested in our gardens. Grown using organic, no-chemical methods in our biodiverse and regenerative homestead garden.

Natural Freeze-Dried Preservation

We preserve our garden-grown produce with a home-scale freeze dryer (the same process used to make astronaut ice cream!). There are zero preservatives, chemicals, or sulfites.

Freeze-dried produce has a crunchy texture that easily crumbles, but the flavor is bright and fresh, just like raw.

To freeze-dry, we take our fresh garden product directly to our home-scale freeze-drying machine. The freeze-drying process requires a specialty machine to remove water from foods by rapidly freezing down to -40 degrees, then lowering the pressure with a vacuum, removing the ice via a process called sublimation. Because of the extremely low temperatures, the fruit retains more of its original qualities: its color, shape, nutrients, and aromatics are closer to fresh.

Fun fact: Ancient Inca farmers in the Andes discovered the technique of freeze-drying well before modern science by using the extreme temperatures of the altiplano to preserve potatoes. They're called chuño!
